An instrumental method for determining dry noodles' bending fracture rate

Abstract:In order to construct an instrumental method for determining bending fracture rate of noodles, the elastic moduluss of four kinds of dry noodles were measured by using a 3-point bending test. The relation between the end axial displacement and the end bending angle of dry noodles was determined, and the values measured by this method and the values calculated by compressive rod mechanical model were compared. The results show that the errors between the values calculated and measured for the end bending of dry noodles are all less than 5°, the end axial displacement and the end bending angle of dry noodles are in a positive linear relationship, and the end axial displacement of bending fracture rate of qualified noodles should be over 12 mm. It is feasible to evaluate the bending fracture rate of noodles using the end axial displacement.
