Abstract:A production method of high hydroxyl radical inhibition by water-soluble protein from stress millet was developed. The test indicated that H2O2 and Protamex play key roles in the hydroxyl radical inhibitory activity. Fractional factorial design, central composite experimental design and response surface methodology were used to optimize those factors. The optimal stress medium composition was listed as follows : H2O2 1.56 % , gibberellin 0. 259 6 mg/L, Protamex 0. 248 g/L and Tween -40 0.7%. With the optimal medium, the highest hydroxyl radical inhibition (58.16%) was achieved.
